Slow Cookbook Recipe No. 5

Canadian Turnip Puff

TURNIP PUFF: a Canadian Fall Recipe, quick & easy

Submitted by one of our readers, Roseline Grech

INGREDIENTS

6 cups of hot mashed turnip
4 tablespoons of butter or margarine
2 teaspoons baking powder
1/4 teaspoons of pepper
6 tablespoons brown sugar
4 eggs, well beaten
1/2 teaspoon salt
bread crumbs
paprika

DIRECTIONS

Combine turnip, butter, eggs, brown sugar, baking powder, salt and pepper. Mix until thoroughly blended.
Turn into a buttered casserole dish. Top with a generous amount of soft buttered bread crumbs.
Sprinkle with paprika and bake at 350°F for 25 minutes or until lightly browned.

Serves 10 people
Can be made the day before and baked the next day.

The Turnip Puff can be paired with a variety of wines from around the world. A rich Pinot Gris fits the bill from Alsace or Oregon, or you may try a fruitier California wine like a “Santa Maria” Pinot Noir.
